Ingredients
- 1 pie crust
- 2 whole onions sliced thin
- 1 teaspoon sugar
- 1 Tablespoon olive oil
- 4 whole tomatos , sliced thin
- 8 ounces feta cheese
- 4 tablespoons parmesan cheese
Preparation
Step 1
1. Place pie crust into torte pan (or place on baking sheet and crimp edges). Bake until browned, about 10 minutes in 350 deg. oven.
2. Sauté onions in olive oil, then add sugar to caramelize. Cool slightly, then spread onto pie crust. Sprinkle Feta over onions. Then layer the tomatoes over the Feta. Drizzle a small amount of olive oil over tomatoes. Sprinkle parmesan cheese over tomatoes and return to oven for 10-15 minutes, until Feta is bubbly. Garnish with basil and serve at once.
