Ingredients
- 1 1/2 cup flour (self-rising)
- 1/2 tsp black pepper
- 1 (3 lb) chicken, cut into 8 pieces
- 1 tsp. salt
- 1 cup buttermilk
- Crisco solid shortening
Preparation
Step 1
Season flour with pepper. Sprinkle salt over chicken; dredge in flour. Shake off excess and dry for 15 minutes. Pour buttermilk into shallow bowl and dip chicken pieces in it. coat chicken again with flour. Over high heat, melt shortening to a depth of 2 inches. Brown chicken on both sides, meaty side down. Lower heat; cover skillet and cook 10 to 20 minutes. Remove cover; raise heat and crisp coating. Remove from skillet. Drain on paper towels. Serves 6.
