Confetti Sloppy Joes

Ingredients

  • 2 lb. ground round
  • 1 T. olive oil
  • 1 medium onion, chopped
  • 9 baby bell peppers, chopped
  • 4 garlic cloves, minced
  • 1 (6 oz.) can tomato paste
  • 1 cup sliced jarred pepperoncini salad peppers
  • 1/2 t. red pepper flakes
  • 1/2 cup root beer soft drink
  • 1 (1 oz.) tub home-style concentrated chicken stock (such as Knorr Homestyle Stock)
  • 1 t. kosher salt
  • 2 cups shredded sharp Cheddar cheese
  • 8 hoagie rolls
  • Deli coleslaw

Preparation

Step 1

1. Cook ground beef in a large skillet until browned and crumbly. Drain well. Wipe skillet clean. Add beef to a 6-qt. slow cooker
2. Heat oil in skillet. Add onion and bell peppers, and cook, stirring occasionally, 3 to 4 minutes or until tender. Add garlic, and cook, stirring constantly, 1 minute.
3. Add onion mixture to slow cooker. Stir in tomato paste and next 5 ingredients. Cover and cook on LOW 4 hours. Stir in cheese. Serve on rolls with coleslaw.
