Ingredients
- 1 lb boneless chicken or veal cutlets
- Salt and pepper and flour
- Lightly brown meat in butter and olive oil (about 2 minutes each side and then set aside)
- 3 cloves garlic chopped fine
- 4 cups plum tomatoes cut smaller (2 cans)
- 2 teaspoon salt
- 1 tablespoon oregano
- 1/4 cup fresh basil or 2 Tablespoons dry basil
Preparation
Step 1
Sautee garlic in olive oil until soft. Add tomatoes, salt, and oregano. Simmer 15 minutes or low. Remove from heat, stir in basil. Put in glass pan and heat in oven.
*optional: add ¼ cup fresh parsley on top
350º for about 1 hour
Serve with or over pasta (i.e. linguini)
Denise’s modifications: adds green peppers (i.e. 2 green and 1 red), onion and parmesan cheese and maybe mushrooms.
Denise cuts up filet chicken into bite sizes…coats it in salt, pepper and flour and browns it in oil and garlic. .
She uses can plum tomatoes and big can of tomato sauce. She adds parmesan cheese, dry basil, oregano, peppers, and onion.
She brings to boil and then simmers for couple hours on top of the stove. Maybe 2-3 hours.
