Turkey and Vegetable Focaccia Sandwich

Very good; had at Susan's house. Buy good focaccia with onions/olives/tomatoes/etc on top.

Ingredients

  • 1 Can artichoke hearts (14 oz), drained and coarsely chopped
  • 1 red pepper, chopped
  • 1/3 medium cucumber, seeded and chopped
  • 1/3 cup prepared GOOD SEASONS ITALIAN SALAD DRESSING
  • 3 pkg. (6 oz. each) of Deli style oven roasted turkey breast
  • 6 slices Mozzarella Cheese slices
  • 1 10-12-inch focaccia bread, split open

Preparation

Step 1

Combine Artichokes, peppers, cucumber, and olives in large bowl. Add dressing; toss to coat.

Layer 1/2 of the turkey, then all of the veggie mixture, remaining turkey, then cheese onto bottom half of focaccia. Cover with top of focaccia.

Cut into 8 wedges to serve.
