Ingredients
- 8 oz bacon cut 1 inch thick crosswise
- salt and pepper
- 1 lb spaghetti
- 3 eggs
- 3/4 cup grated Parmesan
- 1/2 cup half and half
Preparation
Step 1
Boil a large pot of water. In a large skillet, cook the bacon over medium, until crisp, 8-12 minutes. Transfer to paper towel lined plate.
Add pasta to salted boiling water, cook until al dente.
In a bowl, whisk together eggs, parmesan and half and half.
Drain pasta, leaving some water. Add hot pasta to egg mixture. Add bacon, season with salt and pepper, toss to combine. Serve immediately, sprinkled with more Parmesan.
