Ingredients
- 1 1/2 lb boneless skinless chicken breast, cut into 1 inch cubes.
- 1 tbsp cornstarch
- salt and pepper
- 2 tbsp vegetable oil
- 6 garlic cloves, minced
- 8 scallions, cut into 1 inch pieces
- 2 tbsp rice vinegar
- 3 tbsp hoisin sauce
- 3/4 cup raw cashews, toasted
Preparation
Step 1
In a medium bowl, toss the chicken with cornstarch until coated. Season with salt and pepper.
In large nonstick skillet, heat 1 tbsp oil over medium. Cook half the chicken, tossing, until browned, 3 minutes. Transfer to a plate. Repeat with rest of chicken.
Return both batches of chicken to skillet, along with garlic and white parts of scallions. Add vinegar, cook until evaporated, 30 seconds.
Add hoisin sauce and 1/4 cup water, cook about 1 minute. Remove from heat, stir in scallion greens and cashews. Serve immediately.
