Ingredients

  • 1 cup cake flour
  • 1/3 cup unsweetened cocoa
  • 10 large egg whites, at room temperature
  • 1-1/4 cups sugar
  • 1 tsp. cream of tartar
  • 1/4 tsp. salt
  • 1 oz. bittersweet or semi-sweet chocolate, grated
  • 1-1/2 tsp. vanilla extract

Preparation

Step 1

Preheat oven to 350 F. Combine cake flour and cocoa in small bowl; sift twice.
With electric mixer on medium speed beat egg whites in large bowl until thick and foamy. Gradually sprinkle in sugar, beating until blended. Add cream of tartar and salt; beat until medium peaks form, 3-5 minutes.
With rubber spatula gently fold one-third of flour mixture into beaten whites just until blended; repeat 2 more times. Gently fold in chocolate and vanilla just until blended.
Pour batter into 10-inch tube pan. Gently run knife through batter to remove any large air pockets.
Bake until cake begins to pull away from sides of pan and toothpick inserted into center comes out clean, 35-40 minutes. Invert pan onto bottleneck or inverted metal funnel and let cake cool completely. To serve, run knife around sides of pain and center tube. Unmold cake onto serving plate.
