Ingredients
- 1/4 cup diced onion
- 2 packets instant chicken broth mix
- 2 garlic cloves
- 1 1/2 cup thinly sliced zucchini
- 1/2 cup thinly sliced carrots
- 1/2 cup thinly sliced tomatoes
- 1 tsp basil leaves
- 1/8 tsp pepper

Preparation
Step 1
In a 1 1/2 qt pan combine onion, broth mix and garlic, cook until onion is translucent. Add remaining ingredients and stir to combine, cover and cook over low heat about 10 minutes. Add 2 cups water and bring to a boil. Reduce heat cover and cook for about 20 minutes. Using a slotted spoon remove about 1/2 cup vegetables and set aside. In blender puree remaining soup and return to pan with the vegetables and heat.
