Ingredients
- Crust:
- 1 pkg graham crackers
- 1/4 c butter, melted
- 1/4 c sugar
- Cheesecake:
- 8 oz cream cheese, softened
- 1 c (8 oz) sour cream
- 1/2 c sugar
- 2 eggs
- grated lemon rind
- 1 t vanilla extract
- dash of salt
- Top Layer:
- 1 c (8 oz) sour cream
- 4 T sugar
- 1 t vanilla extract
Preparation
Step 1
Crust:
Mix ingredients together with a fork. Pour half of the mixture into pie dish pressing along the sides to form a crust. Bake at 350 for 5 minutes. Cool. Reserve the remaining mixture in the freezer.
Cheesecake:
Blend ingredients together until smooth. Pour into crust. Bake at 325 for 30 minutes. Cool.
Blend together top layer ingredients and spread carefully on cooled pie. Bake at 425 for 5 minutes or until there is no jiggle.
