PUFFY BAKED APPLE PANCAKE

Ingredients

  • 1/2 cup evaporated milk
  • 1/3 cup Bisquik
  • 2 TBS granulated sugar, divided
  • 3 large eggs, separated
  • 2 TBS orange juice
  • 1/4 tsp ground cinnamon
  • 1 medium apple, cored, quared and cut into thin slices
  • 1 TBS cinnamon sugar
  • Powdered sugar, optional

Preparation

Step 1

1. Preheat oven to 375 degres. Lightly grease a 10" ovenproof skillet

2. Combine evaporated milk, baking mix, 1 TBS sugar, egg yolks, orange juice and cinnamon in blender; process until smooth.

3. Place the skillet in oven for 3-4" or until hot (do not overheat, or the skillet may begin to smoke).

4. Meanwhile beat egg whites in a large mixer bowl until soft peaks form; gradually add remaining 1 TBS sugar. Beat until stiff peaks form. Fold milk mixture into egg whites.

5. Pour batter into hot skillet. Gently push each apple slice about 1/2" into batter, peel side up, to form a spokelike pattern. Bake for 10-15" or until set. Serve immediately. Sprinkle w/ powdered sugar if desired.
