Short Ribs (Beef)

Ingredients

  • 8 beef short ribs
  • 1 large onion
  • 3 med carrots
  • some thyme
  • 2 bay leafs
  • 1 c red wine
  • 1/2 can 28 oz can of diced tomatoes
  • 1/2 box of chicken stock

Preparation

Step 1

1. Drudge your short ribs in a bit of corn starch and brown lightly in a bit of olive oil. Remove.
2. Roughly chop some onions and some carrots and some garlic - saute in the to pick up any of the brown bits at the bottom of the pan.
3. Add some thyme and some bay leaf.
4. Once the veggies have softened - add the red wine then add the tomatoes and the chicken stock. Once the liquids have come to a simmer - add back the beef short ribs. They should be for the most part submerged.
5. Cook in the oven at 350 for a couple of hours - at this point add a splash of balsamic vinegar - and then continue cooking for another 1/2 hour to 45 mins.
