Ingredients
- 4 LARGE RUSSET POTATOES, ROUGHLY PEELED AND CHOPPED INTO SMALL PIECES.
- 1 CUP GRATED SWISS CHEESE OR A CUP JARLSBERG CHEESE
- 4 GREEN ONIONS, FINELY CHOPPED
- 1/2 CUP BROCCOLI PIECES
- SALT AND FRESHLY GROUND BLACK PEPPER
- 1-1/2 CUP HEAVY CREAM
Preparation
Step 1
PREHEAT OVEN TO 375 DEGREES
SPRAY 16 MUFFIN TINS WITH VEGETABLE SPRAY
MIX TOGETHER POTATOES, BROCCOLI AND ONIONS INTO EACH MUFFIN CUP. SEASON WITH SALT AND PEPPER AND TOP EACH CUP WITH 2 TABLESPOONS OF CREAM
COVER WITH FOIL AND BACK FOR 30 TO 40 MINUTES REMOVING THE FOIL HALFWAY THROUGH COOKING TIME.
