Warm Shrimp and Potato salad

Ingredients

  • 1 pound small red potatoes
  • 1/4 pound large shrimp -- peeled and
  • 1/4 cup light mayonnaise
  • 1/4 cup 1% low-fat milk
  • 1 tablespoon capers -- drained
  • 1 teaspoon white wine vinegar
  • 1/4 teaspoon salt
  • 1/4 teaspoon Dijon mustard
  • 1/4 teaspoon freshly ground black
  • 1/4 cup thinly sliced red onion
  • 1 bag gourmet salad greens -- (5-ounce)

Preparation

Step 1

1. Place potatoes in a medium saucepan,
and cover with water; bring to a boil.
Reduce heat, and simmer 12 minutes or
until tender. Add shrimp; cook 2 minutes or until done. Drain and rinse with
cold water; drain.


2. Combine mayonnaise and the next 6
ingredients (mayonnaise through pep-
per) in a large bowl, stirring mixture
with a whisk. Add potatoes, shrimp, and
onion; toss to coat. Serve over greens
