Tiramisu

Ingredients

  • 2 8 oz cartons mascarpone cheese
  • 1/2 cup sugar
  • 1/2 cup whipping cream
  • 2 tablespoons light rum
  • 1/2 teaspoon vanilla
  • 3 3 oz package ladyfingers
  • 2 cups brewed coffee or hot chocolate -- cooled
  • 1/2 cup sliced almonds -- toasted
  • 1 1/2 teaspoons unsweetened cocoa
  • 1 teaspoon cinnamon

Preparation

Step 1

Combine cheese, sugar, whipping cream, rum and vanilla in large mixer
bowl; beat until smooth and creamy. Arrange 1 1/2 packages ladyfingers,
cut side down, in bottom of 7x11 glass baking dish. Sprinkle half of
coffee over lady fingers. Then spread half of cheese mixture over
ladyfingers. Sprinkle half of nuts, cocoa and cinnamon over the cheese
mixture. Arrange remaining ladyfingers over that. Sprinkle with remaining
coffee and layer with remaining cheese, nuts, cocoa, and cinnamon.
Refrigerate, covered, several hours or overnight.


Garnish with chocolate curls.

I've made a fruit syrup with raspberries and blueberries and sugar
and used it instead of coffee/chocolate. That's really good too.





NOTES : I generally add about three tablespoons of Ghiardelli sweet
chocolate powder to a cup of coffee to make the sprinkling liquid,
rather than making coffee and hot chocolate separately.

You can also substitute brandy of other liquor for the rum, or
even leave it out completely.
