Steamed Mussels in Wine Sauce

Ingredients

  • 2 pounds fresh large mussels
  • 2 Tablespoons olive oil
  • 1/2 cup fresh parsley -- chopped
  • 4 cloves garlic -- minced
  • 2 plum tomatoes
  • 1 cup dry white wine
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Preparation

Step 1

Soak mussels in cold, salted water for at least 30 minutes. Rinse and
remove beards and barnacles. Throw away any that don't close tightly when
being handled.

Heat oil in 12 inch skillet over medium high heat. Cook garlic and
parsley in oil until garlic is lightly golden. Add tomatoes, wine, salt
and pepper.

When liquid boils, add mussels and cook about 7-10 minutes until shells
open. Discard any unopened mussels

NOTES : Great as an appetizer or a light meal. Serve with chunks of
crusty italian bread for soaking up the garlicky wine sauce.
