Triple Pepper Steamed Halibut

Ingredients
- 1 1/2 tablespoons olive oil
- 4 cups yellow onion -- thinly sliced
- 2 1/2 cups red bell pepper -- cut in strips
- 2 1/2 cups yellow bell pepper -- cut in strips
- 2 1/2 cups orange bell pepper -- cut in strips
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 4 cloves garlic -- minced
- 1 cup dry white wine
- 1/4 cup chopped fresh basil
- 2 tablespoons chopped fresh oregano -- (or 1 tsp dried)
- 6 6 ounce halibut fillets

Preparation
Step 1
Heat oil in large skillet. Add onions, peppers, garlic, ground black
pepper and 1/2 tsp. salt. Saute for 20 minutes, until tender.
Add wine basil and oregano. Stir and cook one minute.
Sprinkle fillets with remaining salt and pepper. Arrange on top of pepper
mixture. Cover and simmer for about 10 minutes, until fish is cooked
through.
