Ingredients
- 1 9 ounce package refrigerated cheese filled ravioli or tortellini
- 2 tsp bottle minced garlic
- 2 tsp olive oil or cooking oil
- 1 1/4 cups thinly sliced yellow summer squash (1 medium)
- 4 plum tomatoes, quartered
- 1 (15 ounce) can garbanzo beans, rinsed and drained
- 2 tsp snipped fresh thyme or 1/2 tsp dried thyme, crushed
- 1/4 tsp ground black pepper
- 4 cups shredded fresh spinach
- olive oil or cooking oil (optional)
- grated Parmesan cheese (optional)

Preparation
Step 1
1. Cook ravioli according to package directions.
2. Meanwhile, in a skillet, cook and stir garlic in 2 tsp hot oil for 30 seconds. Add squash, tomatoes, garbanzo beans, thyme, and pepper. Cook and stir over medium - high heat 4 to 5 minutes or until squash is crisp - tender and mixture is heated through.
3. Drain ravioli; add to vegetable mixture. Toss lightly. Arrange spinach on 4 serving plates; top with ravioli mixture. IF desired, drizzle additional olive oil and sprinkle with cheese.
