Corn Bread, Golden

I use a little less corn meal and a little more flour. That makes the bread lighter. I also use a small cast-iron skillet.

Ingredients

  • 1 Cup Yellow Corn Meal
  • 1 Cup All-Purpose Flour
  • 1/4 Cup Sugar
  • 4 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 Cup Milk
  • 1 Egg
  • 1/4 Cup Shortening (melted)

Preparation

Step 1


Combine corn meal, flour, sugar, baking powder and salt.
Add milk, egg and shortening.
Beat until fairly smooth, about 1 minute.
Bake in greased 8-inch square baking pan in preheated hot oven (425) 20 minutes.
