Golumki (Stuffed Cabbage)

Ingredients

  • 1 large head cabbage
  • 2 medium onions, diced
  • 1 1/2 C Minute rice, uncooked
  • 2 lbs ground beef or turkey
  • 1 lb ground pork
  • 3 large eggs
  • salt and pepper
  • 3 cans (10 3/4 oz) tomato soup
  • 1 1/2 C water

Step 1

Place whole cabbage in large pot. Cover with water and boil gently. As leaves become limp, remove from pot. Trim off hard stem, let drain.

In a large bowl, mix onions, rice, ground meat, eggs, salt and pepper.

Place a few outer leaves on the bottom of the pot. Put in a couple of spoonfuls of soup and some water.

Place a leaf on your palm with the stem pointing toward your arm. Place a large spoonful of meat mixture on leaf. Roll stem part over meat. Tuck sides in, one over the other. Roll wrap towards fingertips. Tuck end in slot formed by folds.

Lay wrapped rolls of leaves stem side down in pot alternating with soup and water. Cover and bring to a boil. Reduce to a simmer and cook for 1 1/2 hours on stove. Serve with mashed potatoes.

Rolls can also be frozen to bake later. Placed one layer of rolls stem side down in a baking dish sprayed with nonstick cooking spray. Spoon tomato soup and water over rolls; freeze. When ready to cook; thaw and bake at 350oF for 1 hour.
