- 3 envelopes of Knox gelatin
- 1/2 cup cold water
- 1 3/4 granulated sugar
- 2/3 cups corn syrup
- 1/4 cup water
- 1/4 teaspoon salt
- 1 tablespoon vanilla
- icing sugar
Preparation
Step 1
Prepare a 9 x 13-inch pan by linig it with plastic wrap and oiling it with a bit of vegetable oil.
In the bowl of an electric mixer, sprinkle gelatin over 1/2 cup cold water. Soak for 10 minutes.
Combine sugar, corn syrup, and 1/4 cup water in a small saucepan. Bring to a boil and boil hard for 1 minute.
Pour boiling syrup into gelatin. Add the salt and beat for 12 minutes. Add vanilla.
Scrape into prepared pan and spread evenly. It helps if your hands and/or the spatula are also lightly oiled.
Cover marshmallow mixture with another piece of plastic wrap and press mixture into the pan. Let mixture sit for a few hours or overnight.
Sprinkle your clean cutting board with a bit of icing sugar. Turn out the marshmallows and sprinkle more icing sugar on top. Cut into 1-1 1/2 inch squares. Lightly roll each marshmallow in more icing sugar. These will keep for a few weeks in an airtight container.
