Mediterranean Avocado Boats

Ingredients

  • 1 tablespoon lime juice
  • 2 ripe avocados, peeled and halved
  • 1/2 teaspoon butter
  • 5 medium eggs, beaten
  • 2 green onions, minced
  • 1/4 cup chopped fresh cilantro
  • 4 olives, chopped

Preparation

Step 1

Pour the lime juice on the avocado halves, and set aside.
Melt the butter in a large skillet
Mix together the eggs, onions, cilantro, and olives, and place in a large skillet with the butter.
Cook for 5 minutes over medium heat. Set aside.
Place the cooked egg mixture in the avocado halves. Add salt and pepper. Serve.
