NUTTY, CHEESY, FRENCH BEAN SALAD

  • 1 POUND FRESH FRENCH BEANS
  • 1/4 CUP VINAIGRETTE DRESSING
  • 1/2 CUP BLUE CHEESE CRUMBLES
  • 1/2 CUP TOASTED WALNUTS OR SLICED ALMONDS
  • SALT AND PEPPER TO TASTE

Preparation

Step 1

IN A LARGE SAUTE' PAN, BRING 2 CUPS OF WATER TO A BOIL. BLANCH THE FRENCH BEANS IN THE BOILING WATER FOR 2-3 MINUTES. FRENCH BEANS SHOULD BE BRIGHT GREEN IN COLOR AND STILL CRISPY. DRAIN AND PLACE INTO A BOWL OF ICE WATER TO COOL. DRAIN AGAIN AND PAT DRY. DRIZZLE WITH DRESSING, SALT, PEPPER AND TOSS WELL. ADD IN THE BLUE CHEESE CRUMBLES AND TOASTED NUTS AND TOSS AGAIN. SERVE A ROOM TEMPERATURE. IF MAKING AHEAD, REFRIGERATE AND ADD IN THE BLUE CHEESE AND NUTS RIGHT BEFORE SERVING.
