Ingredients
- 3/4 cup shortening.
- 1 cup sugar.
- 2 eggs.
- 1/2 teaspoon lemon extract.
- 2 1/2 cups all-purpose flour.
- 1 teaspoon baking powder.
- 1 teaspoon salt.
- Colored sugar
Preparation
Step 1
Iin a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and extract combine the flour, baking powder and salt. Gradually add to the creamed mixture and mix well. Cover and refrigerate for at least two hours or until easy to handle.
On floured surface roll dough to 1/8 inch thickness. Cut with 2 1/2 inch cookie cutters. Place on greased baking sheet. Sprinkle with colored sugar.
Bake at 400° for 7 to 9 minutes or until lightly browned. Remove to wire racks to cool
