Mini Shepherd Pie Cups

Ingredients

  • 1 lb. ground beef
  • 3 Tbls chopped onion
  • 1/2 tsp minced garlic
  • 1/3 cup ketchup
  • 1 Tbls cider vingear
  • 1/2 tsp salt
  • 1 1/4 cup water
  • 3 Tbls butter
  • 1 1/4 cup mashed potato flakes
  • 3 oz. cream cheese
  • 12 oz. refrigerated buttermilk biscuts

Preparation

Step 1

In a large skillet, cook beef, onion, and garlic over medium heat until meat is no longer pink; drain. Stin in the ketchup, vinegar, and salt; set aside.

In a small saucepan, bring water and butter to a boil. Stir in potato flakes until blended. Beat in cream cheese until smooth.

Press biscuts onto the bottom and up the sides of 10 greased muffin cups. Fill with beef mixture. Spread potato mixture over beef.

Bake at 375 degrees for 20-25 minutes.
