Ingredients
- 2 C whole wheat flour
- 1 t baking powder
- 1/2 t salt
- 2 C milk
- 4 eggs
- 4 T butter, melted + extra for cooking
- 1 T honey
- Fillings such as bananas, pears, peaches, blueberries, pecans, jam
- Warm, p0ure, maple syrup for serving
Preparation
Step 1
1. In large bowl, whisk flour, baking powder and salt, set aside
2. Separate the egg yolks from egg whites.
3. In small bowl, combine milk, egg yolks, melted butter and honey. Whisk together thoroughly. Add milk mixture to flour mixture and whisk til combined, but still lumpy.
4. Using electric mixer whisk egg whites until white and fluffy and soft peaks form. Carefully fold egg whites into pancake batter.
5. Finely dice fruit and, or nuts to use as filling. Set aside.
6. Warm up pan (with small wells) over medium heat. Melt butter into each well and cook filling. Use skewers to turn pancakes halfway.
