Butter Pecan Cookies
- 3 c chopped pecans
- 2 c butter, softened
- 1 1/3 c sugar
- 4 tsp vanilla
- 1/2 tsp salt
- 4 c flour
Preheat oven to 350'. On a baking sheet, toast pecans until fragrant, about 6 minutes. Let cool completely; finely chop.
With a mixer, cream butter for about a minute. Add sugar and cream until light, about 1 minute more.
Beat in vanilla, salt, and flour, scraping down sides of bowl, just until dough comes together. Fold in pecans.
Separate dough into 48 pieces. Form into balls and roll in sugar. Place 3" apart on baking sheet.
Gently flatten with the bottom of a glass.
Bake for about 15 minutes or until golden brown.
