I love this recipe for a quick and easy dinner. I have also used broccoli and/or spinach when I do not have any broccolini. The great thing about this dish is you can modify it any way you want!

  • 6 Pita loaves
  • 4-6 slices of cooked bacon, crumbled
  • Olive oil
  • Minced garlic
  • Crushed red pepper (optional)
  • Italian blend shredded cheese
  • Broccolini
  • Cherry tomatoes, sliced

Step 1

1. If you prefer a crisper "crust" toast your pitas on the lowest toaster setting first. Line a cookie sheet with foil, place pitas on foil.

2. Spread a small (about a 1/4 tsp) amount of olive oil with the back of a spoon or a brush on each pita,all the way around, including edges.Then spread minced garlic (whatever amount you like, I usually use 1 tsp) and sprinkle with crushed red pepper flakes.

3. Sprinkle a small amount (around 1-2 tbsp) of cheese on each pita. Add toppings. Top with more cheese (to your liking).

4. Place pan with pitas on top rack of oven. Turn on the broiler,they are done when the cheese is melted and the pita is starting to brown, about 5 minutes, but keep an eye on them since every oven cooks differently.
