Coconut Balls

Ingredients

  • 2 eggs, beaten
  • 1 cup white sgar
  • 1 cup chopped dates
  • 1/4 tsp. salt
  • 1 1/2 cups coconut
  • 1 tsp. vanilla
  • 2 cups rice crispies
  • 1/2 cup chopped nuts
  • 1/4 cup chopped cherries

Preparation

Step 1

Combine eggs, sugar and dates in heavy skillet. Set over low heat and cook 10 minutes, stirring constantly. Remove and stir in salt and vanilla.

Combine cereal, nuts and cherries. Pour date mixture over and blend well.

Form into balls and roll in coconut. Set on waxed paper and cool until firm.

Makes 3 1/2 dozen.
