Chocolate Coconut Oatmeal Breakfast Cookies

These sweet chocolate, coconut, and oatmeal cookies are perfect for breakfast, with plenty of protein and energy in each bite.
Ingredients
- 1/2 cup butter, softened
- 1/2 cup creamy peanut butter
- 1 1/4 cup granulated sugar
- 1 egg
- 1/4 cup water
- 1 teaspoon vanilla
- 1 1/2 cups all purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup old fashioned oats
- 1 cup chopped pecans (or other favorite nut)
- 1 cup shredded coconut
- 1 1/2 cups bittersweet chocolate chips

Step 1
Preheat oven to 375°F.
Cream butter and peanut butter. Add in sugar and beat for 5 minutes. Add in egg, water and vanilla, cream until well combined. Stir in flour, baking soda and salt. Mix in oats, chopped nuts and coconut. Fold in chocolate chips.
Drop by heaping tablespoon about 3 inches apart on ungreased baking sheet. Bake for 10-12 minutes. Let cool on baking sheet for 5 minutes then remove to racks to cool completely.
