Chicken and Rice Casserole

Ingredients

  • 2 C chicken, cooked and cut into small pieces
  • 1 C rice, cooked
  • 1 can of cream of chicken soup
  • 3 TBS onion, chopped
  • 2 C celery, diced
  • 2 TBS lemon juice
  • 1/4 C mayonnaise
  • 1 tsp salt
  • 1 tsp pepper
  • 1 C potato chips, crushed

Preparation

Step 1

Combine all ingredients except chips in a large bowl. Mix well.
Place in 2-quart baking dish
Cover with crushed potato chips
Bake for 30 to 40 minutes in a preheated 350 F oven.
