Coconut Quinoa Pilaf

Ingredients
- 2 cups quinoa
- 1 1/2 cans coconut milk
- 1 1/2 cups water
- 1 bunch green onions, diced
- 3 cloves of garlic, smashed and chopped
- 3/4 tsp. sea salt
- 1/2 to 1 tsp crushed chilies
- 1/2 cup chopped cilantro
- 1 red bell pepper, diced

Preparation
Step 1
Prep all your ingredients.
Rinse the dry quinoa in a fine mesh strainer under warm water. Quinoa has a natural saponin coating that repels insects and birds, which is quite bitter when eaten. Rinsing the quinoa gets rid of this saponin and makes the quinoa taste nuttier and smoother.
Place the rinsed quinoa in a medium saucepan with the coconut milk, water, green onions, garlic, sea salt and chili flakes. Cover and bring to a boil, then turn the heat down and simmer for about 20 min (or until all the liquid is absorbed)
Let sit in the pot for 10 min, stir in the red peppers then place in a bowl and fluff with a fork, adding the cilantro.
