Ingredients

  • 2 T pomegranate juice
  • 1 T Olive oil
  • 1 tsp honey
  • 1 tsp red wine vinegar
  • 1/8 tsp salt
  • 3 c baby spinach
  • 1/2 cup edamame
  • 1/4 c pomegranate seeds
  • 2 T crumbled goat cheese
  • 1 T sliced almonds

Step 1

1. In large bowl mix first 4 ingredients

2. Add spinach, edamame and pomegranate seeds

Toss and top with goat cheese and almonds
