Ingredients

  • 4

    cups (1 lb.) butternut squash, cubed

  • 2

    tablespoons olive oil

  • 1

    scallion, sliced

  • ½

    tablespoon fresh sage, sliced

  • 4

    tablespoons goat cheese

  • 4

    slices toast

  • Sliced scallion for topping

Directions

In a microwavable bowl, combine butternut squash, olive oil, scallion and sage; season. Heat on high in 2-minute increments until tender, 6 to 8 minutes. Smash; season. Spread 1 tbsp. goat cheese on each of slice of toast; mound with squash. Top with sliced scallions.
