Crispy potato patties with Creole shrimp
Ingredients
- 3 cups cold leftover mashed potatoes
- 1 lg. egg beaten
- 1/2 c plain bread crumbs
- 2 large stalks celery
- 1 small green or red pepper
- 4 cloves garlic
- 1 T plus 1/2 cup vegetable oil
- 2 tsp. salt free creole seasoning
- 1 can (14 oz) dice tomatoes
- 1 # large 16 to 20 count shrimp
- 2 tsp. Louisiana style hot sauce

Step 1
1. Form potatoes into 8 (1/2 in. Thick) patties. Brush tops with egg and sprinkle with half crumbs, pressing to adhere. Turn patties over and repeat on other side. Place patties on cookie sheet and freeze 20 min. Meanwhile chop celery, pepper and garlic.
2. In 4 quart saucepan, heat 1 5 oil on med. high. Add celery and pepper and creole seasoning. Cook until vegetables begin to soften, add garlic. Cook 2 min. add tomatoes. Heat to simmering, reduce heat to maintain simmer and cook 10 min. Stirring occasionally
3. While sauce simmers, in 12 inch skillet heat 1/2 cu oil on med. high. Add patties to pan and cook until golden brown on each side.
4.To saucepan, add shrimp and hot sauce. Cook 5 min. Or until shrimp are opaque throughout. Serve over patties
