  • You need 3, 4 or 5 ribs.



Step 1

Bring meat to room temperature by letting it sit in roasting pan on the counter (covered to protect it from pets) for 2-3 hours

Pre-heat oven to 400

Cook for 1 hour then turn off oven and leave in oven WITH DOOR CLOSED for a minimum of 2 hours. (can be left this way for up to 6 hours)

Turn oven on again to 400 and cook:
35 minutes for rare
40 minutes for medium
50 minutes for well-done

Remove from oven and let sit for 10-15 minutes (do not skip this step you will lose all the juices)
