Ingredients
- 2 3/4 cups sugar
- 1 1/4 cup vegetable oil
- 3 large eggs- room temp
- 1/2 28 oz can solid pack pumpkin
- 3 cups flour
- 1 tbspn ground cloves
- 2 tbspns ground cinnamon
- 3 tspn ground nutmeg
- 1 tspn baking soda
- 1/2 tspn salt
- 1/2 tspn baking powder
- 1 cup coarsely chopped walnuts or raisins (optional)
Preparation
Step 1
Preheat oven to 350F.
Butter and flour two 9x5x3 inch loaf pans. Or use 12 muffin pan with Pam Flour spray. Beat sugar and oil in large bowl to blend. Mix in egg and pumpkin. Sift flour, cloves, cinnamon, nutmeg, baking soda, salt and baking powder into another large bowl. Stir into pumpkin mixture in 2 additions. Add walnuts or raisins if desired.
Bake 1hr 15 mins. if loaf or about 35 mins. if muffins. Makes 24 muffins.
