Wax Pecan Cake from Aunt Sharon

Ingredients

  • 1-1/2 cups flour
  • 1-1/2 teaspoons baking powder
  • 1 lb. light brown sugar
  • 1 quart pecan halves
  • Whites of six eggs, well beaten
  • 1 teaspoon vanilla

Preparation

Step 1

Sift brown sugar and sift again with flour and baking powder. Add egg whites well beaten and mix together. Stir in vanilla and pecans. Pour into a foil lined loaf pan and bake in slow oven (325 degrees) for one hour, or until done. Makes one large loaf .

The hardest part of making this cake is sifting the brown sugar, but it is worth the effort.
