Ingredients
- 1 tsp olive oil
- 1 small onion {chopped}
- 1 lb of lean ground turkey
- 2 Tbsp taco seasoning {I love Trader Joe's }
- 2 cups of cooked brown rice
- 1 cup of black beans {from a can}
- 1/2 cup of shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1 avocado diced
- cilantro {for garnish}
Preparation
Step 1
heat the skillet over medium
add the oil and onion
saute until soft {just a few minutes}
add the ground turkey, and cook until browned - stir to crumble [4 - 5 minutes}
add the taco seasoning
stir in the rice and beans, cooking until everything is warmed through
top with the cheese, and cook until melted
remove from the heat, and top with the diced tomatoes, avocado, and cilantro
It’s great served as is , but my kiddos loved scooping it up with chips of course.
