    Eggs, beaten

  • ½

    cup egg whites

  • tsp black pepper

  • 2

    tbsp butter

  • 1½-2

    cups chopped veggies (choose your favorites such as...mushrooms, tomatoes, zucchini, asparagus, spinach, broccoli)

  • ½

    of a sweet onion, finely chopped

  • ½

    cup meat (sausage, bacon, ham, ground beef,prosciutto etc.)

  • ½

    cup cheese, shredded (use your favorite cheese)Asiago/Parm combo will be amazing

Directions

Instructions Preheat oven to 400 degrees F. In medium bowl, combine eggs, pepper. Heat butter in an 8 inch, oven proof skillet. Add vegetables and cook over medium high heat until tender. Pour the egg mixture over the vegetables. Sprinkle cheese on top.. Place the filled skillet in the oven and cook for 20-25 minutes. Remove from oven and allow to sit for 5-10 minutes
