Best blackened catfish recipe ever, with a wonderful cream sauce to top the fish!

Ingredients
- Seasoning Mix for fish:
- 2 t. paprika
- 2 T. crushed bay leaves
- 1/2 t. granulated onion
- 1/2 t. granulated garlic
- 1/4 t. basil
- 1/4 t. oregano
- 1/4 t. thyme
- 3 t. salt
- 1/4 t. black pepper
- 1/2 t. white pepper
- 1/4 t. cayenne pepper
- Mix well
- Cream Sauce for Blackened Catfish:
- 1 stick real butter
- 1 bunch green onions, chopped
- 1/2 bunch finely chopped parsley
- 2 T. flour
- 1 (12oz) carton half-n-half
- 1/2 lb. sliced Swiss cheese
- 1 T. sherry wine
- 1/8 t. cayenne pepper
- 1/4 t. salt

Step 1
Directions for cream sauce:
Melt butter in a heavy pot on medium heat. Sauté onions in butter until soft. Add parsley. Stir in flour, cream, cheese and stir gently until cheese is melted. Add sherry and seasonings. Heat only until thickened, do not boil.
Directions for Fish:
Coat top and bottom of raw fish with the seasoning mix. On the grill, heat a cast iron grill until it is white hot. Place fish on the grill, grill each side for 3 mins. When ready to serve top the fish with the cream sauce.
