Ingredients
- 1/4 cup diced onion
- 1/2 tsp minced fresh garlic
- 1/2 tsp ground turmeric
- 2 tsp olive oil
- 1/2 cup dry converted white rice
- 1 1/4 cup chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 tbs seeded and minced jalapeno
- juice of 1/2 lime
- salt to taste
Preparation
Step 1
Saute onion, garlic and turmeric in oil in a saucepan over medium heat, 2-3 minutes. Add rice, stir to coat, then add broth and bring to a boil. Cover rice, reduce heat to low and simmer until tender, 15-20 minutes. Stir in beans and jalapeño and cook to heat through. Stir in lime juice and season with salt.
