Roasted Garlic Mashed Potatoes

Ingredients

  • 1 head garlic
  • 1 Tbs. olive oil
  • 1 bunch green onions, chopped
  • 2 Tbs. butter
  • 6 large potatoes
  • 6 oz. cream cheese, softened and cut in pieces
  • Pepper

Preparation

Step 1

Preheat oven to 350 degrees. Cut 1/8 to 1/4" from the top of garlic. Place in baking dish; drizzle with olive oil. Bake 45-60 minutes, until tender. Remove from oven. Pop cloves from skins and mash when cool.

Reduce temperature to 300 degrees. Saute the green onions in skillet until just tender. Cook potatoes until tender.

Mash potatoes; stir in garlic, green onions, cream cheese, and pepper. Spoon into baking dish sprinkled with paprika. Bake 10 minutes or until light brown.
