Ingredients
- 3/4 c. sugar
- 1/4 c. corn starch
- 1/8 t. salt
- 3 c. milk
- 3 egg yolks, beaten
- 1 c. flaked coconut
- 1 1/2 T. butter
- 1 t. vanilla
- 1 10 in. pastry shell, baked
- meringue
Preparation
Step 1
Combine first 3 ingredients in a heavy sauce pan. Combine milk and egg yolks; gradually stir into sugar mixture. Cook over medium heat. Stirring constantly, until mixture thickens and boils. Remove from heat and stir in coconut, butter and vanilla. Pour filling into cooled pastry shell. Cover with wax paper, pressing to touch filling. Set aside in refrigerator until cold. Then remove paper and cover with meringue. Bake at 425 for 6-7 mins, or until meringue is slightly browning.
