French Scrambled Eggs

  • 12 eggs
  • 1/4 cup half and half
  • 1 tsp salt
  • 1/4 tsp white pepper
  • 1/2 cup soft cream cheese
  • 2 tbsp very finely chopped fresh parsley
  • 2 tbsp very finely chopped fresh dill
  • 2 tbsp very finely chopped scallions
  • 2 tbsp butter



Step 1

Beat eggs, half and half, salt, and pepper together. In separate bowl mash cream cheese with herbs. Melt butter in large saucepan and pour in egg and cheese mixtures. Over low heat, stir constantly just until cheese begins to incorporate. Turn off heat and let mixture sit about 20 minutes. Just before serving, turn on heat and scramble. (The resting period makes a difference and gets the flavors well blended together. Don't skip it)
