Ingredients

  • 4-5 russet potatoes
  • 1 can condensed cheddar soup
  • 1 1/4 cups milk
  • 8-10 slices bacon
  • 8 chicken tenderloins
  • 1 cup shredded cheese
  • Salt and pepper

Preparation

Step 1

1. Combine soup and milk and whisk until smooth. Set aside 1 cup of mixture for later use.
2. Wash and peel potatoes and cut think (1/4").
3. Grease 9x13 dish and the spoon 1/4 cup soup mix on dish and lay a layer of potatoes. Sprinkle with salt and pepper. Repeat this process until three layers are complete and a soup mix is on top. Cover and cook on 350 for 30 minutes.
4. Slice bacon into 1/2' pieces and cook on medium-high in a skillet. Remove with slotted spoon and keep grease in skillet.
5. Brown and sear chicken on medium-high in the bacon grease. (does not need to cook through.)
6. Once potatoes finish, uncover, and then place the chicken on top of potatoes and then pour reserved soup mixture on top. Cover and cook for 30 minutes.
7. Uncover dish and sprinkle with cheese and bacon pieces and cook uncovered for 5-10 more minutes.
