Pignoli Cookies

Ingredients

  • 1 lb almond paste
  • 2-4 egg whites (I use 3)
  • 1 tsp baking powder
  • 1 1/2 cups confecton sugar
  • 1 lb pignoli nuts

Preparation

Step 1

Starting with 2-3 egg whites, mix all ingrediants together until well blended. Add more egg whites only if necessary, dough is very sticky.
Roll dough into small balls and into nuts.
Place on well-greased cookie sheet or parchment paper. Bake 15-18 minutes at 350 degrees. As soon as cookie browns on edges they are done. Be careful because they burn very quickly
