Grilled Zucchini With Feta

This is Trisha Yearwood's recipe, without making the herb salt. I felt it was too salty when I made the salt as it was harder for me to judge how much actual salt I was using. In the future, I prefer to season it separately.

Ingredients
- 3 medium zucchini, ends trimmed, sliced lengthwise into 1/4-inch thick planks
- Olive oil for brushing
- Dried oregano
- Dried thyme
- Salt
- Pepper
- 1/2 cup crumbled feta cheese

Preparation
Step 1
Brush the zucchini planks on both sides with olive oil. Sprinkle both sides with oregano, thyme, salt, & pepper. Place zucchini planks on a grill pan on medium heat. Cook until tender, about 5 minutes, flipping halfway through. Remove the zucchini to a serving platter & sprinkle with feta cheese. Serves 4-5.
