cherry or Cranberry Almond Biscotti

Ingredients

  • 1 1/2 c sugar
  • 4 eggs
  • 1/2 c oil (or butter)
  • 1 Tbs almond extract
  • 4 c flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 c slivered almonds

Preparation

Step 1

1. Mix sugar, eggs, oil, extract very well together.

2. Add flour, baking powder, salt and almonds to sugar mixture.

3. Stir in chopped dried cherries or cranberries.

4. Shape and flatten into 4 logs. Place on greased cookie sheets

5. Bresh tops with egg wash and sprinkle with coarse sugar.

6 Bake 350' for 25-30 minutes.

7. Cool 15 minutes. Slice into 1" pieces. Separate so that slics are 1/2" or so apart. Rebake at 300' for another 15-20 minutes.
