Ingredients
- 1 can whole kernel corn, drained
- 1 cup Cheddar cheese, grated
- 1/4 cup mayonnaise
- 1 roasted red bell pepper (could use fresh)
- 1/4 cup sweet onion finely diced
- 1/4 teaspoon ground cumin
- 1/2 10 oz chili-cheese corn chips, crushed

Preparation
Step 1
Mix first 6 ingredients and chill. (if you like a little kick, add a little cayenne or chipotle powder). Stir in corn chips just before serving.
Note; I'm giving you the recipe the way I make it for two. There is still enough for leftovers. The original recipe calls for double this amount so for a larger group............
